A sweet recipe featuring a soft biscuit dough, to be filled as you like, with Nutella, jams or mascarpone and strawberry cream. The roll is a very spectacular dessert to prepare for a party or as a simple dessert.

INGREDIENTS
- 4 eggs
- 120 gr sugar
- 1 vanillia
- 50 gr 00 flour
- 50 gr potato flour
- 1 teaspoon baking powder
- 1 pinch of salt
Mascarpone cream and strawberry compote
- 200 gr mascarpone
- 50 gr icing sugar
- 100 ml cream for desserts
- 300 gr strawberries
- Lemon juice and zest
- 2 tablespoons sugar
METHOD
Starting from the base:
Separate the yolks from the whites and combine the former with the sugar and vanilla. Beat for at least 10 minutes. To one side, whip the egg whites until stiff with a pinch of salt. Gently fold them into the egg yolk mixture with a bottom-upwards motion. Proceed in a similar way with the sifted flour together with the yeast and potato flour. Pour the mixture onto a baking tray lined with baking paper, taking care to level it well and bake at 180° for 8 max 10 minutes. Remove from the oven and transfer the base onto a damp cloth (without removing it from the baking paper). Sprinkle the surface with a little sugar and cover it with cling film. Roll it lengthwise including the tea towel and leave to cool. Once cooled, reopen, spread Nutella or jam. Reroll and wrap in cling film, placing it in the fridge for a couple of hours.
Filled with mascarpone cream In a bowl, combine the mascarpone with the icing sugar and mix well. Separately, whip the cream and gradually incorporate it into the mascarpone mixture.
For the strawberries Cut them into pieces, place them in a saucepan together with the sugar and lemon juice. Cook for about ten minutes. Leave to cool.
Assembly Once the roll is cold, remove the film and moisten it with the strawberry juice. Also add the chopped strawberries with the mascarpone cream. Roll the biscuit dough again and close it tightly with cling film. Leave to rest in the fridge for at least a couple of hours. Enjoy your meal!
