INGREDIENTS
- 2 medium eggs
- 300 gr milk
- 250 gr flour
- 70 gr sugar
- 50 gr melted butter
- 1 sachet of baking powder
- 1 level teaspoon of bicarbonate of soda
- 1 spoonful of white wine or apple vinegar
- 1 pinch of salt
- 1 envelope of vanillin

METHOD
Let’s begin!
First you need to divide the yolks from the whites, so get two bowls. Whip the egg whites until stiff and leave them aside (in my opinion this is the FUNDAMENTAL process for the success of pancakes!) Let’s move on to the egg yolks and add the sugar and vanilla. Then add the milk and melted butter, stirring constantly (with an electric whisk or a manual whisk) and then add the flour, baking powder, bicarbonate of soda (sifted) and a pinch of salt. Now I’ll reveal the secret ingredient: white wine or apple vinegar; you can decide whether to add it or not, but I advise you to do so, the flavor will not be noticeable at all but it is very useful for making the pancakes rise, swell and make them firm. even softer. Mix the egg whites, previously whipped, with delicate movements from bottom to top to this mixture. LISTEN TO ME! Remember how precious egg whites are. The dough is ready, let it rest for about half an hour in the fridge, but you can also prepare the mixture in the evening, leave it in the fridge and cook the pancakes in the morning.
FOR THE COOKING
Grease a pan or a napkin previously greased with seed oil with a little butter, then place it on the stove to heat it and pour a ladle not too full of the mixture into the center of the pan, allowing it to expand on its own. You need to cook the pancakes on low heat for about 2-3 minutes per side. When the famous bubbles appear on the first side it’s time to turn! Help yourself with this movement with a fairly stiff spatula or a fork. Proceed like this with all the others.
