Chocolate Muffins

Last minute guests? Chocolate muffins are the perfect dessert saver. To be eaten for breakfast or as a snack and accompanied by a cappuccino or hot tea, they are very easy and quick to make. They are prepared in classic moulds (silicone/ paper) which give them a round shape with a dome top. My favourites are these chocolate ones, a real triumph of flavours!

Preparation: 15 min
Cooking: 15-20 min
Total: 30 min
Difficolty level: low

  • 2 eggs
  • 150 gr sugar
  • 125 ml di plain yogurt / vanilla / hazelnut
  • 50 ml milk
  • 60 ml seed oil
  • 175 gr 00 flour
  • 30 gr bitter cocoa
  • ½ sachet of baking powder
  • pinch of salt
  • 100 gr milk chocolate with hazelnuts

Prepare the muffin tray with the moulds beforehand, preheat the oven to 180° top-bottom, fan mode. In a bowl, whisk the eggs with the sugar until you obtain a frothy mixture. Add the yogurt, continuing to mix, then slowly add the milk and oil. Sift the flour with the cocoa and the yeast, and a pinch of salt. Finally add the chocolate bar cut into cubes or flakes. Transfer the mixture into the baking moulds, filling ⅔ full, sprinkle the surface with dried fruit or more chocolate as desired! Cook for 15-20 minutes, and remember to test with a toothpick until it comes out clean and dry.
